Cauliflower cream soup

Cauliflower cream soup is a velvety and comforting dish that's perfect for a light yet satisfying meal. Here’s a simple recipe to make a creamy cauliflower soup:

Ingredients:

  • 2 tablespoons olive oil or butter
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 large head of cauliflower, cut into florets
  • 1 medium potato, peeled and diced (for added creaminess; optional)
  • 4 cups vegetable or chicken broth
  • 1 cup milk or cream (adjust based on desired richness)
  • Salt and pepper to taste
  • 1/4 teaspoon nutmeg (optional)
  • Fresh chives or parsley for garnish (optional)

Instructions:

  1. Sauté Aromatics:

    • Heat the olive oil or butter in a large pot over medium heat.
    • Add the chopped onion and cook until softened and translucent, about 5 minutes.
    • Add the minced garlic and cook for another minute until fragrant.
  2. Cook Cauliflower and Potato:

    • Add the cauliflower florets and diced potato to the pot. Stir to combine with the onions and garlic.
    • Cook for about 5 minutes, stirring occasionally.
  3. Add Broth:

    • Pour in the vegetable or chicken broth, making sure the vegetables are covered.
    • Bring the mixture to a boil, then reduce the heat and let it simmer until the cauliflower and potato are tender, about 15-20 minutes.
  4. Puree Soup:

    • Use an immersion blender to puree the soup directly in the pot until smooth. If you don’t have an immersion blender, carefully transfer the soup in batches to a regular blender, then return it to the pot.
  5. Add Cream:

    • Stir in the milk or cream. Heat gently until warmed through.
    • Season with salt, pepper, and nutmeg if using. Adjust the seasoning to taste.
  6. Serve:

    • Ladle the soup into bowls. Garnish with fresh chives or parsley if desired.

Tips:

  • For a richer flavor, you can roast the cauliflower before adding it to the soup. Toss cauliflower florets with olive oil, salt, and pepper, and roast at 425°F (220°C) for about 25 minutes until golden brown.
  • If you want a bit of tanginess, a splash of lemon juice or a dollop of yogurt can be added just before serving.

This cauliflower cream soup is creamy and comforting with a subtle sweetness from the cauliflower. It’s a great way to enjoy a healthy, flavorful meal. Enjoy!
